Where does durum come from? 

Durum is an offspring of emmer. And a popular one at that! It is one of the most widely cultivated wheats, especially popular in the Mediterranean.

Durum has a loose hull that comes off at harvest, so that?s a plus.  

Also, durum is a hard and robust grain with a high protein content, which is great for making pizza dough and pasta. 

What is durum semolina?

Semolina is the coarsely milled endosperm of a durum grain. It has a texture that is very similar to fine cornmeal.

Due to carotenoids in the endosperm.
