Einkorn, Unicorn? 

Sort of. Unlike modern wheat, einkorn grains are attached to the shaft independently. It is therefore harder to harvest and has a lower yield than other grains. Which turned out to be its saving grace. 

Is Einkorn special?

 Oh yes! It is the only grain that has not been hybridized. Einkorn is the mama of the Triticum family, the original source of many grain crossings.

Is Einkorn nutritious? 

These small grains are full of protein and are easy on the tummy. They contain less starch than modern wheat, and thus less carbs. Much more lutients, manganese, riboflavin, zinc, magnesium, thiamin, niacin, iron, vitamin B6, to name a few. Nourishment that goes a long way. 

Does Einkorn contain gluten? 

Yes. But unlike other wheats, it has a high ratio of gliadins to glutenins. These gluten-forming proteins behave differently than in einkorn than in modern wheat, which may be the reason that it is easier to digest for people who are gluten-sensitive.
